Matthias has worked in some of the top hotels in Ireland
To celebrate Pride month, top chef Matthias Ecker is donating €1 from every bag of his limited edition ‘Happy Pride’ cookies to the Drogheda LGBTQ Community.
Matthias, who lives in Drogheda, has been in hospitality for 20 years and is a former head chef in a number of well known hotels.
Over the pandemic he started baking buns and cakes which proved so popular that he kept on baking and they are now available at a number of local coffee shops.

To mark Pride month he said, “I will be donating €1 from every bag of my limited edition Happy Pride cookies to the @droghedalgbtq @droghedavirtualpride2021 please help to support this year’s Drogheda Pride month by buying a bag of cookies.”
They are available from : Coco Bliss Stamullen, Beo Coffee in Duleek and in Drogheda from West Gate Coffee, Stockwell Artisan Foods, Bubba’s and Coffee at Barlows.

His contribution has been welcomed by Peter James Nugent of the Drogheda LGBTQ Support Group who said what Matthias is doing is, “amazing for Drogheda Pride. It creates awareness within the community for Drogheda Pride.”
He says, “any type of awareness is amazing and what Matthias is doing is taking that a little bit further. It is a symbol of acceptance. It is super cool and we are thankful.”
He says there is still a lot of stigma and at the LGBT support group they see people who are struggling. They have come across instances of bullying and even blackmail and he says, “education is the most important thing for people to understand and if you don’t have anyone in the LGBT community in your bubble, you won’t understand how difficult it is for a person to identify as LGBT. Awareness and education are so important in this day and age.”
The group has been trained in a number of key areas so it can offer support as it is needed. It also has a very good relationship with the Community Policing unit in Drogheda and can report something if it is appropriate to do so.
Tomorrow (Thursday) Drogheda LGBTQ Support Group has a workshop on ‘Empowering ourselves with a Positive Mindset,’ delivered by Nicola Connolly-Byrne .
