New restaurant and bar opened at Slane Castle

The official opening of a new reataurant and bar at Slane Castle, The Gandon Room and Browne’s Bar, took place in glorious weather on Friday last (July 28th).

The Conyngham Family have appointed the highly respected catering and restaurant company Fitzers Catering Limited to operate this new venture.  They in turn have appointed Katherine James Budriene as their Head Chef. 

Katherine, a Boyne Valley native, has developed a reputation for high quality food and elegant presentation.  All ingredients will be fresh and sourced locally and prepared in a way to enhance their natural flavour.  There will also be signature dishes inspired by Lord Henry and Lady Iona.  The menu will be interesting and affordable. 

The Gandon Room is inspired by James Gandon, one of the principal architects of Slane Castle.  He also designed the Customs House and the Four Courts in Dublin.  An elegant and dramatic room, it has been transformed into a comfortable and glamorous restaurant with Gandon’s original designs for the Castle on display in the bookcase.

Named after a legendary house-keeper in the castle, Mary Browne Browne’s Bar is designed in an eclectic fashion and features rock’n’roll memorabilia of the many artists who have played Slane over the years.  This cosy space featuring leather and tartan seating, also has an unusual snug capable of seating up to 12 people, for a quiet drink.

Browne’s Bar will be open daily with a casual and varied menu featuring items from coffee, home-made pastries and cakes to a New York Reuben sandwich.

The Gandon Room will be open for Dinner Thursday to Saturday and for lunch on Sundays 12 pm to 8 pm.  

Barry Storey, Managing Director of Fitzers Catering, told Drogheda life that they have been the dedicated caterers in Slane Castle for events since 2012 and in that time have built a close relationship with the Connyingham family.   

“We are extremely excited to have joined forces with Slane Castle to collaborate on the opening of Brownes Bar and The Gandon Room Restaurant, which should prove to be as iconic as the castle itself” he said.  

“The bar and restaurant concepts located within the castle itself are not only steeped in history, but will offer customers outstanding food and beverage in a “relaxed yet sophisticated setting”.    Fitzers Catering have worked to recruit locally and source ingredients from suppliers in the surrounding areas.  We are confident that the offering is something that the whole community in Slane, and indeed the Boyne Valley region can truly enjoy”
